I’m calling this one “Busy Mom Tuna…But Make It Fancy.” This took under 5 minutes to make and will definitely be on the working lunch rotation for me. Serves 1.
INGREDIENTS:
- 1 can tuna, flaked fine (I like Tonnino)
- Dijon, to taste
- Red onion, diced
- Cilantro, coarsely chopped
- JF Spicy Salt, to taste
- Fresh cracked black pepper, to taste
- Endive
TOPPINGS:
- Radish, sliced thin on the mandoline and cut into matchsticks

Jalapeño, deseeded and diced
- JF Spicy Salt, to taste
PROCESS:
1. In a large bowl, combine your flaked tuna with the dijon, red onion, and cilantro. Season with JF Spicy Salt and cracked black pepper.
2. Plate over endive leaves and top with chopped jalapeño and radish. Enjoy!
