Meet my new “in between”-holiday-event favorite salad. We all consume so much cooked food during the holiday season, I wanted to throw together something fast and fresh tonight. This came together in minutes and has a little bit of everything you need: protein, crunch, creaminess - and it’s all clean. Serves 1.
INGREDIENTS:
Romaine, chopped
Persian cucumbers, sliced thin on the mandolin
Radish, sliced thin on the mandolin and chopped into matchsticks
Cherry tomatoes, chopped
Red onion, chopped
Avocado, sliced
Cilantro, chiffonade
Alfalfa sprouts
Vegan feta, crumbled (I like Trader Joe’s)
JF Mom’s Not Lazy, Lazy Chicken, chopped
JF Spicy Salt, to taste
JF Simple Mustard Vinaigrette, to taste
PROCESS:
In a large bowl, using the chopped romaine as a base, begin to build your salad. Layer in the cucumber, radish, tomato, red onion, avocado, alfalfa sprouts, vegan feta, and my JF Mom’s Not Lazy, Lazy Chicken. Finish JF Spicy Salt and dress in my JF Simple Mustard Vinaigrette. Enjoy!
