“No Green” Kid Friendly Turkey Sweet Potato Meatballs

Sweet potato turkey meatballs are perfect when trying to sneak more vegetables into your kid's meals. Pro tip: dice the garlic and onion super fine for picky eaters. Serves 2 adults or 4 kids. 

INGREDIENTS:

  • ½ large sweet potato, diced and boiled
  • JF Spicy Salt, to taste
  • Olive oil
  • less than ¼ white onion, diced fine
  • ½ garlic clove, diced fine
  • 1 egg (sub flax egg)
  • ½ lb ground turkey
  • ⅛ tsp onion powder
  • ⅛ tsp garlic powder 

PROCESS:

1. Preheat the oven to 375º. In a large pot bring your diced sweet potato to a boil. Once softened, drain, transfer to a bowl, and mash until uniform throughout. 

 

2. Season with JF Spicy Salt to taste

 

3. In a pan, warm your olive oil over medium/medium-high heat and begin to saute the onion and garlic.  

 

4. When softened, transfer into our mashed sweet potato and combine throughout. 

 

5. In a separate bowl combine your ground turkey with 1 egg. Season with JF Spicy Salt, onion powder, and garlic powder. 

 

6. Transfer the sweet potato into our ground turkey mixture and form your meatballs. 

 

7. Line them on a prepared sheet tray, coat in extra olive oil spray, and bake for about 15 minutes, then turn the oven to broil until the tops are crisp and slightly browned. 

 

8. Coat them in your kids favorite tomato sauce and cheese or serve plain.
