Vegan and GF Sheet Tray Lasagne Nachos anyone? Perfect for this snowy WFH NYC day…the best part is the creamy pesto ricotta. Serves 2.
INGREDIENTS:
1 box gluten-free lasagne pasta
JF Simple Tomato Sauce (sub store-bought tomato sauce)
Vegan mozzarella, shredded (I like VioLife)
Vegan parmesan, grated
Italian parsley, chiffonade
JF Pesto Ricotta Spread
JF Spicy Salt, to taste
Pesto Ricotta Spread:
Vegan ricotta (I like Kite Hill)
Vegan pesto (I like Gotham Greens)
PROCESS:
Pesto Ricotta Spread
In a small bowl, combine equal parts ricotta and pesto. Set aside.

Preheat the oven to 375º. Toss your uncooked lasagne sheets in a generous amount of my JF Simple Tomato Sauce, coating evenly. Lay them out on a prepared baking sheet; ladle over extra sauce as needed. Cover with foil and bake for about 30 minutes.
Once time has elapsed, pull them out and top with additional sauce; most will have been absorbed by the heat. Bake uncovered for a few additional minutes, then begin to top.
Sprinkle over shredded vegan mozzarella and spoon on our Pesto Ricotta Spread. Place back in the oven to melt.
Finish with finely grated vegan parm, fresh parsley, and a touch of JF Spicy Salt. Enjoy!
