This really is the easiest comfort food you can make! It takes 15 minutes to whip up and can be totally personalized with your choice of veg, curry, toppings, etc. Serves 3.
INGREDIENTS:
Avocado oil
½ white onion, chopped
1 tsp ginger, minced
2 garlic cloves, diced
1 cup green beans
1 cup broccoli florets
1 cup cauliflower florets
5 small mushrooms, sliced
1 can coconut cream (I like Trader Joe’s)
2 Tbsp red curry (I like Thai Kitchen)
1 (7oz) package konjac noodles (I like Miracle Noodle Fettuccini)
JF Spicy Salt, to taste
TOPPINGS:
Jalapeño, deseeded and sliced thin
Cilantro, coarsely chopped
Green onion, sliced on the diagonal
PROCESS:
In a large sauté pan warm the avocado oil, white onion, ginger, and garlic, allowing them to soften and become fragrant over the heat. Add in your green beans, broccoli, cauliflower, and mushrooms, cooking down slightly. Add the coconut cream and curry paste; combine well.
Allow the sauce to simmer over low heat until the veg is tender and flavors well incorporated. Season with JF Spicy Salt and plate over kojnac noodles. Finish with sliced jalapeño, cilantro, and green onion. Enjoy!
