The easiest, two-ingredient dessert that’s completely clean and so delicious. Serves 1.
INGREDIENTS:
Avocado oil
1 banana, mashed
2 eggs, beaten
Chocolate chips (I like Evolved)
Cinnamon (optional)
TOPPINGS:
Maple sugar
Vegan butter
Maple syrup
PROCESS:
Whisk together your mashed banana and eggs to create the pancake batter. Mix in your chocolate chips.
Warm the avocado oil in a pan and ladle in small batches of batter to form each pancake. Allow these to slightly brown on one side before flipping. Be careful they’re delicate. Wipe the pan clean between batches.
Enjoy warm topped with maple sugar, vegan butter, and maple syrup.
