I wanted to remake one of my favorite salads from the 90's when I lived in LA. I decided to fry some kelp noodles to add a nice crunch! Serves 1.
INGREDIENTS:
90's LA Salad:
2 cups romaine lettuce, chopped
¼ cup carrots, cut into matchsticks
1 package kelp noodles, fried
6 shrimp
1 Tbsp avocado oil
Dressing:
¼ cup seasoned rice vinegar
3 Tbsp sesame oil
¼ cup avocado oil
1 tsp JF Spicy Salt
⅛ tsp fresh cracked black pepper
1 tsp fresh ginger, grated
2 tsp fresh chives, chopped
PROCESS:
Dressing:
Whisk together all ingredients until well combined.
Heat the avocado oil in a pan and put the kelp noodles in once the temperature reaches 350-375°. Pull the noodles out once they become crispy.
In a medium pan, sauté the shrimp in avocado oil and season with JF Spicy Salt.
Add the lettuce, carrots, kelp noodles, and shrimp into a bowl. Top with shrimp, the fried kelp noodles, and dressing to taste.
*Do not soak the kelp noodles as shown in video. Fry them straight from the bag.
