My kids really enjoy these simple, quick breads and they make the perfect easy brunch or dessert option. Serves 6.
INGREDIENTS:
Apple Mixture:
1 granny smith apple, peeled and chopped
½ lemon, juiced
⅓ cup brown sugar, packed (sub brown coconut sugar)
1 tsp ground cinnamon
Bread:
½ cup (1 stick) butter, softened (sub ghee or vegan butter)
⅔ cup granulated sugar (sub coconut sugar)
2 large eggs
1 tsp pure vanilla extract
1⅓ cup all-purpose flour (sub almond flour)
1 tsp baking powder
½ cup orange juice
Glaze:
2 Tbsp butter, melted (sub ghee or vegan butter)
1 cup organic powdered sugar (sub date sugar)
½ tsp pure vanilla extract
1½ tsp milk (sub almond milk)
PROCESS:
Preheat your oven to 350º. Line a 9x5" loaf pan with parchment paper.
In a large bowl, stir together chopped apples, lemon juice, brown sugar, and cinnamon.
In another large bowl using a hand mixer, cream together the butter and sugar until it is light and fluffy. Add the eggs and vanilla. Beat until smooth.
Add flour, baking powder, and orange juice and mix until just combined.
Add half batter to prepared loaf pan, then press in half the apple mixture. Top with remaining batter, then press remaining apples on top. Bake for about 1 hour 5 minutes until loaf is golden brown and a toothpick inserted into the center of the cake comes out clean.
Once cool, drizzle the glaze over the top.
