INGREDIENTS:
Avocado Grapefruit Butter Lettuce Salad:
2 cups butter lettuce, torn into bite size pieces
½ avocado, diced
¼ cups JF Pickled Red Onions
¼ cups grapefruit
Small handful of roasted, unsalted sunflower seeds
JF Spicy Salt, to taste
JF Pickled Red Onions:
½ red onion, sliced into thin rings, then halved
1 lime
1 tsp JF Universal Salt or JF Spicy Salt
Lime Cilantro Vinaigrette:
½ cup avocado oil
1¼ cups fresh cilantro
3 Tbsp fresh squeezed lime juice
1 Tbsp apple cider vinegar
½ tsp oregano
1 tsp JF Spicy Salt
1 tsp water
PROCESS:
JF Pickled Red Onions
Place the onions in a shallow airtight container. Juice the entire lime over the onions. Add JF Universal Salt or JF Spicy Salt. Close container and shake well. Refrigerate at least 1 hour or overnight.
Lime Cilantro Vinaigrette
Place all the ingredients in a blender and pulse until you reach your desired consistency.
Avocado Grapefruit Butter Lettuce Salad
Place all of the salad ingredients in a bowl and pour the dressing over. Enjoy!
