These pancakes are a regular in the Fisher household and the kids love them. The best thing about these pancakes is they are a hit every time, with grown-ups and kids alike.
INGREDIENTS
2 cups flour (sub almond flour)
3 Tbsp sugar (sub coconut sugar)
1 tsp of JF Universal Salt
2 Tbsp baking powder
2 fresh organic eggs
¼ cup butter, melted (sub ghee or vegan butter)
1¾ cup milk (sub almond milk)
1 banana, sliced
¼ cup dark chocolate chips (I like Hu)
PROCESS
Mix dry ingredients in bowl. Beat each egg separately. Combine the eggs and melted butter with the milk and slowly stir into the flour mixture. Let mixture sit while heating skillet. Pour batter onto the heated skillet. Flip the pancakes as soon as they begin to bubble. Top with bananas, chocolate chips, and syrup or your choice of fruits.
