BETTER THAN THE DELI CUCUMBER SALAD

I have a soft spot for sliced cucumber salads from upscale delis in NYC. My favorite is from E.A.T. uptown on Madison. Serves 1.

INGREDIENTS:

1 English cucumber, peeled and finely chopped
red onion, sliced thin on the mandolin then chopped
2½ tsp red wine vinegar
2 Tbsp olive oil
1-2 tsp organic cane sugar, to taste (sub coconut sugar)
½ tsp JF Spicy Salt
Fresh cracked black pepper, to taste
1 Tbsp fresh dill, finely chopped
Red pepper, chopped (optional)
Feta cheese or goat cheese (sub plant-based cheese; optional)
Lemon (optional)

PROCESS:

Combine all the ingredients into a mixing bowl and adjust the seasoning as necessary. I like mine slightly sweet, so I add extra sugar and pepper. You can even add a squeeze of lemon here. This is a great base for a protein or a crisp dinner side.
