INGREDIENTS:
Blackened Shrimp:25 small shrimp, deveined and tails removed
1 tsp garlic powder
1 tsp oregano
1 tsp chili powder
1 tsp cumin
1 tsp paprika
2 garlic cloves, minced
JF Spicy Salt, to taste
Easy Garlic Lime Vinaigrette:
2 Tbsp olive oil
2 Tbsp lime juice, fresh squeezed
1 clove of garlic, smashed and minced
JF Spicy Salt
Blackened Shrimp Salad:
2 cups red leaf lettuce, chopped
¼ cup vegan feta cheese, crumbled
¼ cup red onion, chopped
½ avocado, diced
PROCESS:
Blackened Shrimp:
In a small bowl, combine the garlic powder, oregano, chili powder, cumin, and paprika. Mix well. Rinse the shrimp and remove all of the tails. Place them in a medium bowl and pour the seasoning over them. Let them sit in the seasoning for at least 30 minutes.
In a medium pan on medium high heat, sauté the shrimp in coconut oil for 2 minutes on each side of the shrimp. Season with JF Spicy Salt and add the minced garlic while cooking. Set these off to the side to cool.
Easy Garlic Lime Vinaigrette:
In a small bowl, whisk together the olive oil, lime juice, and mashed garlic. Season with JF Spicy Salt. Blend this if you want to, but this step is not necessary.
Blackened Shrimp Salad:
In a large salad bowl, place the red leaf lettuce. Top this with vegan feta cheese, red onion, and avocado. Add some of the blackened shrimp and dress the salad with the
