Cipollini Onions

These delicious boiled onions remind me of my Auntie Jeanette’s creamed onions that always made an appearance at Thanksgiving. Serves 2. 

INGREDIENTS:

1 bag of pearl onions
2 Tbsp unsalted butter (sub unsalted vegan butter)
JF Spicy Salt, to taste

 

PROCESS: 

In a large pot boil 5 cups of water. Add the pearl onions and boil for 3 minutes.
Carefully strain the onions and place them on a cutting board. After they have cooled a bit, cut the ends off of them and gently push them out of their onion skin.
Place the onions in a small saucepan with the butter and JF Spicy Salt. Cook until the onions are coated in butter. This is an amazing side dish with any kind of meat.
