BRIGHT AND CRUNCHY ASIAN INSPIRED VEGGIE SALAD

BRIGHT AND CRUNCHY ASIAN INSPIRED VEGGIE SALAD

This fresh, crunchy salad is a delicious side dish, but is also a very filling lunch. Serves 1.

 

INGREDIENTS:

Dressing:
¼ cup seasoned rice vinegar
3 Tbsp sesame oil
¼ cup avocado oil
1 tsp JF Spicy Salt
tsp fresh cracked black pepper
1 tsp fresh ginger, grated
2 tsp fresh chives, chopped
 
Salad:
2 cup romaine lettuce, chopped
¼ cup cabbage, shredded
¼ cup cucumbers, sliced thin on the mandolin
¼ cup green onion, chopped
¼ cup red pepper, sliced thin on the mandolin
2 tsp chives, chopped
½ can of mandarin oranges (I like Trader Joe's)
2 Tbsp sunflower seeds (sub almonds)
Rotisserie chicken, sliced (optional)

 

PROCESS: 

Combine all the ingredients for the salad dressing in a small bowl and whisk together. Prep all of the salad ingredients. Combine all ingredients in a large bowl. Drizzle the salad dressing on top and finish with JF Spicy Salt to taste. Add rotisserie chicken to this to create a traditional Chinese chicken salad.
