Squid is one of those super fast and underrated proteins…I think because people are freaked out to try to cook it correctly. Tonight I did the fastest sautéed lemony garlic calamari with oregano, lemon zest, olive oil, and JF Spicy Salt topped vegan feta..Kevin couldn’t believe it was dairy free feta. Serves 2.
INGREDIENTS:
1 package squid, defrosted, cleaned, and cut
½ lemon, zested and juiced
3 Tbsp olive oil (I like Kyoord)
JF Salt of choice
1 garlic clove, chopped
TOPPINGS:
Vegan feta (I like Trader Joe’s)
JF Spicy Salt
Dried oregano
Parsley, chiffonade
Lemon zest
A squeeze of fresh lemon
A drizzle of olive oil (I like Kyoord)
PROCESS:
Slice the defrosted calamari into rings. Place them in a bowl and marinate with your fresh lemon juice for about 5 minutes. When ready, drain any excess liquid and season with JF Salt of your choice.
In a large pan, bring the olive oil to a sizzle and add the calamari. As they release liquid over the heat add your lemon zest and garlic; don't do this before the liquid is released as they will burn. Sauté for about 1-2 minutes until slightly browned - be sure not to overcook.
Enjoy over greens, paired with JF Spicy Salt seasoned vegan feta, oregano, parsley, a drizzle of olive oil, extra pan sauce, fresh lemon zest and juice - so good!
