I've been dying to make this recipe - super clean and totally satisfying, plus easily freezable for long work days or after a late night out. Customize with your choice of toppings and sauces; make these your own! Yields 4 large burgers.
INGREDIENTS:
3 cups cauliflower florets, roasted and cooled
1 bunch sautéed dinosaur kale
2 eggs
1 Tbsp olive oil
½ cup almond flour
Vegan mozzarella cheese, shredded (I like Violife)
JF Spicy Salt, to taste
½ tsp smoked paprika (optional)
Onion powder (optional)
Olive oil (I like Kyoord)
Grain-free hamburger buns, toasted (I like Unbun)
Roasted Cauliflower:
3 cups cauliflower florets
Olive oil
JF Spicy Salt, to taste
Sautéed Kale:
Olive oil
1 bunch dinosaur kale, roughly chopped
2 garlic cloves, minced
TOPPINGS:
Vegan cheddar cheese, sliced and melted
Dijon mustard
Red onion, sliced
Avocado, sliced
Sprouts
Fresno chile
JF Spicy Salt, to taste
BBQ sauce (optional)
Buffalo sauce (optional)
PROCESS:
Roasted Cauliflower
Preheat your oven to 400°. On a baking sheet, toss your cauliflower florets in olive oil and season with JF Spicy Salt. Convection roast until golden brown; then cool.
Sautéed Kale
In a large pan, over medium heat, begin to warm your olive oil. Add the dinosaur kale and minced garlic. Sautéing down until slightly tender; be sure not to burn.
Cauli Burger
In your blender add the cooled, roasted cauliflower, sautéed kale, three eggs, and olive oil. Pulse until just combined, about 6 seconds. Be careful not to over-blend - it will liquify.
Remove from the blender and begin to work in your almond flour and shredded vegan mozzarella. Season with additional JF Spicy Salt, smoked paprika, onion powder; adjust seasonings to taste. Form your burger patties.
In a large pan warm the olive oil. Lay in your burgers and allow each side to brown over the heat. Gently flip halfway through; they’re delicate. Cool on a wire rack before serving/storing.
On a toasted, grain-free bun, begin to build your burger. Layer on the vegan cheddar, dijon, red onion, avocado, sprouts, fresno chile peppers, JF Spicy Salt, any of your other favorite toppings to finish. Enjoy!
