I have been craving hummus and decided to make a bean-free cauliflower version. Serve warm with cucumbers and other vegetables. Tastes just like regular hummus!
INGREDIENTS:
5 cups cauliflower, roasted
¼ cup organic tahini
2 garlic cloves
¼ tsp cumin
Pinch of coriander
½ tsp JF Spicy Salt
½ lemon, juiced
TOPPINGS:
Olive oil, to taste
1 Tbsp parsley, chopped
JF Spicy Salt, to taste
Lemon juice, to taste
PROCESS:
Roast 2 heads of cauliflower and remove 5 cups of the roasted cauliflower from the pan. Add the cauliflower and all other ingredients to a blender. Blend until the consistency is creamy. Top with a drizzle of olive oil, chopped parsley, lemon juice, and JF Spicy Salt.
