LOOKS PROCESSED BUT IT ISN’T CHEESE SAUCE

Due to the weather, I was craving fondue, but I wasn’t in the mood for the hassle. This is very simple and definitely hit the spot. Serves 4.

INGREDIENTS:

1¾ cheddar cheese, at room temperature (sub plant-based cheese)
2 Tbsp unsalted butter (sub ghee or vegan butter)
2 Tbsp all-purpose flour (sub almond flour)
¾ cup half and half (sub almond milk)
JF Spicy Salt, to taste
Fresh cracked black pepper, to taste

PROCESS:

In a pot on medium high heat, melt the butter. Add the flour and whisk together really well. Add the half and half in quarter cup increments whisking as you go. Once the butter, flour, and half and half are combined into a nice ‘sauce’ slowly add the cheddar cheese. This can be a little time consuming, but it is so worth it. Slowly whisk in all the cheese allowing it to melt before adding more. Season with JF Spicy Salt and fresh cracked black pepper. Dip steamed broccoli, pretzel bites, or chicken tenders in this.
