This is a copycat of the Chipotle cilantro-lime rice. So good, great for kids, and easy to pair with any protein of your choice. Serves 4 with leftovers.
INGREDIENTS:
- 2 cups organic jasmine rice, rinsed and drained
- 8 cups water
- 1 organic bay leaf
- JF Spicy Salt
- 2 Tbsp organic cilantro, chopped fine
- 2 Tbsp fresh organic lemon juice
- 2 Tbsp fresh organic lime juice
PROCESS:
1. Bring eight cups of water to a boil. Add in your rinsed jasmine rice, 1 bay leaf, and a generous pinch of my JF Spicy Salt. Allow that to cook down and absorb the water for about 14 minutes.
2. Once time has elapsed, strain and rinse the rice with hot water. Transfer it to a large bowl and work in your cilantro, JF Spicy Salt, lemon, and lime juice.
3. Adjust seasonings to taste and enjoy!
