CLOUD EGGS

In an effort to expand my horizons, I decided to make these delicious looking ‘cloud eggs’. They taste delicious too! Give them a try. Serves 2.

INGREDIENTS:

2 eggs
1 Tbsp green onion, thinly sliced
Pinch of JF Spicy Salt
Pinch of crushed red pepper flakes 
Fresh cracked black pepper, to taste
Olive oil                

PROCESS:

Preheat the oven to350º. Crack your eggs and separate the egg whites and egg yolks. Be careful not to break your egg yolks – they need to be whole. Put all the egg whites in a small mixing bowl. Using a hand mixer, beat the eggs until they make stiff peaks. Add in the green onions, JF Spicy Salt, and crushed red chili pepper flakes and beat together. On a greased, parchment lined baking sheet, place your beaten egg whites into a small cloud like formation. Make a small hole in the middle and carefully place one of the whole egg yolks inside. Bake for 7-8 minutes. Drizzle with olive oil and enjoy with toast.
