I was out really late last night and not feeling my best today, but prepping clean, whole foods will always make me feel so much better than reaching for something packaged. This is my version of a modified Cobb - tomatoes and hard-boiled eggs included. Serves 1. 

INGREDIENTS:

Romaine, chopped
Red onion, chopped
Tomatoes, chopped 
Plant-based cheddar, chopped 
Avocado, chopped
Cilantro, coarsely chopped
Raw sunflower seeds
2 eggs, hard-boiled 
JF Spicy Salt, to taste
JF Simple Mustard Vinaigrette, to taste 

PROCESS:

In a large bowl, using the chopped romaine as your base, begin to build your salad. Layer in the red onion, tomatoes, plant-based cheddar, avocado, cilantro, raw sunflower seeds, and hard-boiled eggs seasoned with JF Spicy Salt. Toss in my JF Simple Mustard Vinaigrette and enjoy!
