Crispy Coconut Chicken Tenders was an easy kid dinner tonight. Super fast to whip up and delicious over buttered noodles tossed in JF Spicy or JF Universal Salt. Serves 4.
INGREDIENTS:
Olive oil (I like Kyoord)
Eggs, beaten
Organic chicken breast, sliced on a diagonal
Panko bread crumbs
Finely shredded, unsweetened coconut
JF Spicy Salt, to taste
Fresh cracked black pepper, to taste
PROCESS:
In a medium-sized bowl whisk the eggs. In a separate bowl, combine the bread crumbs, shredded coconut, JF Spicy Salt, and black pepper; measurements are flexible to meet your preference. Dredge each chicken breast in the egg wash, then transfer to the bread crumb mixture, coating both sides well.
Warm your olive oil in a large pan. As that begins to shimmer, add your chicken, cooking both sides to an even brown. Cool on a wire rack.
Serve over buttered noodles tossed in JF Spicy or JF Universal Salt. Enjoy!
