Comfy Cozy Deconstructed Meatloaf over Cauliflower Rice seasoned with JF Curry Salt (getting a lot of DM requests for more curry salt recipes)…This meal was inspired by a mass fridge clean-out before leaving town for Christmas. Serves 4.
INGREDIENTS:
Cauliflower Rice:
Olive oil
1 bag cauliflower rice
Zucchini, chopped
Red onion, chopped
JF Curry Salt, to taste
Garlic powder, to taste
Onion powder, to taste
A generous pinch of crushed red pepper flakes
Deconstructed Meatloaf:
Olive oil
½ white onion, chopped
½lb ground pork, add more as desired (I like True Story)
JF Spicy Salt, to taste
Fresh cracked black pepper, to taste
1lb grassfed 80/20 ground beef
Garlic powder, to taste
Onion powder, to taste
2 Tbsp mustard
¼ cup unsweetened ketchup (I like Primal Kitchen)
TOPPINGS:
Red onion, chopped
Italian parsley, chiffonade
Vegan cheddar, shredded
PROCESS:
Cauliflower Rice
In a large sauté pan, begin to warm the olive oil. Once it shimmers, add in your cauliflower rice, chopped zucchini, and red onion. Season with JF Curry Salt, garlic powder, onion powder, and crushed red pepper flakes. Don’t rush the cooking process here, let this brown and slightly crisp on the exterior. Once you’ve reached your desired cook, remove from the heat.
Deconstructed Meatloaf
In a separate sauté pan, warm the olive oil. Once it begins to shimmer, add in the chopped white onion and ground pork. Season with JF Spicy Salt and cracked black pepper. Then, work in the ground beef and re-season with JF Spicy Salt, cracked black pepper, garlic powder, and onion powder. Adjust seasonings to taste; adjust ratio of pork to taste. Drain the fat as this continues to cook down.
Work in both the mustard and ketchup; adjust to meet your preference. Let the meat cook down and caramelize on the exterior. When you’ve reached your desired char remove from the heat.
Plate warm over our cauliflower rice and finish with chopped red onion and fresh parsley. Enjoy!
