CREAMY CHILI ROASTED CAULIFLOWER WITH CHARRED SCALLION AND BACON

Try this easy cauliflower as a new side dish during the week. This can easily be made vegetarian if you substitute the bacon with toasted nuts. Serves 4. 

INGREDIENTS:

1 head of cauliflower, roughly cut into wedges
3 Tbsp chili olive oil
JF Spicy Salt, to taste
1 bunch of green onions
2 slices bacon, chopped
JF Mayo-Free Ranch 

PROCESS:

Preheat your oven to 400º. On a parchment paper lined baking sheet, place the cauliflower wedges. Drizzle with chili olive oil and sprinkle with JF Spicy Salt. Convection roast for 20-30 minutes or until the cauliflower is getting golden brown and kind of burnt on the edges.


Trim the ‘hairs’ on the ends of the green onions but do not cut them off otherwise they will fall apart. Lightly char them one at a time over a gas flame very, very carefully. Use a barbecue or a grill pan if you are a beginner in the kitchen. Now chop off the ‘hairs’ and chop up the green onions.


Place the cauliflower down and dress with JF Mayo-Free Ranch. Garnish with charred green onions and chopped bacon bits. Sprinkle with more JF Spicy Salt to taste. Enjoy warm.
