INGREDIENTS:
JF Sweet Potato Mash
JF Grassfed Beef
JF California Style Guacamole
Grain-free tortillas, toasted (I like Siete Burrito Size, trimmed)
Grain-free taco shells
JF Sweet Potato Mash:
1 sweet potato, chopped
3 small Creamer/Yukon gold potatoes, chopped
¼ white onion, chopped
1 Tbsp olive oil, plus more for roasting
JF Spicy Salt
JF Grassfed Beef:
1lb grassfed organic ground beef
1 Tbsp garlic olive oil
1 Tbsp chili powder
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp crushed red pepper flakes
½ tsp paprika
1½ tsp ground cumin
3 tsp JF Universal Salt
1 tsp black pepper
JF California Style Guacamole:
5 ripe avocados
2-3 fresh jalapeños, deseeded and diced
¾-1 medium white onion, finely chopped
¾-1 red pepper to taste, finely chopped
2 limes, juiced
A generous handful of cilantro, coarsely chopped
JF Universal Salt, to taste
Fresh ground pepper
TOPPINGS:
Hot sauce
Dair-free Colby-Jack cheese, shredded
Pickled jalapeños
PROCESS:
JF Sweet Potato Mash
Preheat the oven to 400°. On a lined baking sheet toss your chopped sweet potatoes, Yukon gold potatoes, and white onion in olive oil, and season with JF Spicy Salt. Roast for about 20 minutes until tender. Transfer to a bowl and begin to mash with the back of a fork. Add the olive oil, season to taste, and incorporate well.
Grain, Dairy and Legume Free Crunch Wrap Tacos
When slightly cooled spread the mash onto your toasted tortilla. Allow it to act as a paste, adhering to the outside of your taco shell.
Begin to build out the tacos, filling each with my JF Grassfed Beef, JF California Style Guacamole, dairy-free Colby-Jack, pickled jalapeños, and hot sauce. Serve with my JF Cauliflower Taco Rice and enjoy!
