CURRY CAULIFLOWER RICE

Cauliflower rice is our favorite side dish. This curry cauliflower rice is mild, but delicious and pairs great with any protein or with a side salad. Serves 2.

INGREDIENTS:

3 Tbsp olive oil
1 (24oz) bag of frozen cauliflower rice
1 tsp curry powder, add more to taste
1 red onion, julienned
1 red bell pepper, chopped
2 cloves of garlic, chopped
1 tsp JF Curry Salt
3 cups baby spinach
½ cup fresh cilantro, chopped

PROCESS:

In a large pan on medium high heat, heat 3 Tbsp of olive oil. Add the frozen cauliflower rice and sauté for 3-5 minutes. Let the water cook out before adding anything, so the cauliflower rice isn’t soggy. Season with curry powder and stir in. Add the red onion, red bell pepper, and garlic. Sauté for 2-3 minutes. Season with JF Curry Salt. Add the fresh spinach and let it cook down. Lastly, add the fresh cilantro and stir in. Remove from heat and enjoy.
