DELICIOUS ORANGE CHOCOLATE CHIP BREAD

One of my favorite flavor combinations is orange and chocolate, so I thought why not try them in a quick bread. It's delicious. Serves 8. 

INGREDIENTS: 

½ cup butter (sub ghee or vegan butter)
1 cup organic sugar (sub coconut sugar)
2 large organic eggs 
½ cup orange juice
3 Tbsp orange zest
2 cups AP flour (sub almond flour)
2 tsp baking powder
½ tsp salt
1 cup mini semi-sweet chocolate chips (I like Hu)


Orange Icing Glaze:
1¼ cup sugar (sub coconut sugar)
¼ cup orange juice
1 tsp orange zest
1 tsp salted butter, melted (sub ghee or vegan butter)

PROCESS: 

Preheat the oven to 350°. Grease a standard loaf pan. In a large mixing bowl, beat together the butter and sugar until the consistency is smooth and creamy. Beat in the eggs until fully combined. Add in the orange zest and juice and mix until combined evenly.

 

In a separate bowl, whisk together flour, baking powder and salt. Then, add into the butter mixture and stir until mixed well.  Transfer the mix into prepared loaf pan, smoothing out the top. Bake for 55-60 minutes or until toothpick comes out of the center clean.

 

While the loaf is baking, combine the ingredients for the orange icing glaze in a large Pyrex measuring cup. Add in the butter and whisk until smooth. If it is not pourable, you can heat in the microwave for 30 seconds or so. When the cake is completely cooled, glaze the top.
