Homemade Keto Krispy Kreme

Homemade Keto Krispy Kreme…Yup… I needed a doughnut today while recovering so made a batch and they are insanity…considering another for dinner and after. They are clean and super sweet. Yields 9 mini doughnuts. 

INGREDIENTS:

Dough:
¾ cup + 2 Tbsp Paleo, grain-free baking flour
¼ cup monkfruit sweetener 
2 tsp baking powder
¼ tsp salt
1 tsp vanilla extract 
¼ cup unsweetened almond milk 
2 eggs


Glaze:
¼ cup vegan butter (I like Miyoko’s
½ cup monkfruit sweetener 
1 tsp vanilla extract

PROCESS:

Dough
Preheat the oven to 350​​°. In a large bowl add all of your dough ingredients; combine well. Pour the dough into a prepared doughnut pan. Bake for about 15 minutes. Once time has elapsed, let these cool on a wire rack. 


Glaze
In a small bowl melt all of the ingredients together, about a minute in the microwave. Be sure the monkfruit completely dissolves in the butter to avoid a grainy bite. Allow this to come to room temp, then lightly glaze each donut. The frosting is shockingly sweet, so glaze accordingly!
