EAT YOUR BROCCOLI SALAD

This easy salad is a great way to use stuff you probably already have in the fridge. Serves 1.

INGREDIENTS:

Roasted Broccoli:
Broccoli
Olive Oil
Garlic Powder
JF Spicy Salt


Salad:
3 cups Red Oak lettuce, chopped
2 slices pepper jack cheese, chopped (sub vegan cheese)
JF Mayo-Free Ranch, to taste
JF Simple Mustard Vinaigrette, to taste
1 Tbsp chives, finely chopped
1 Tbsp Sunflower Seeds 

PROCESS:

Preheat your oven to 400º. Coat the broccoli in olive oil,

 

JF Spicy Salt and a generous pinch of garlic powder for an added kick. Place broccoli on a baking sheet and roast for 15-20 minutes.

 

In a large bowl, place the lettuce, broccoli, and pepper jack cheese. Dress the salad with a generous amount of my JF Mayo-Free Ranch and mix in a little of my JF Simple Mustard Vinaigrette.

 

Garnish with sunflower seeds, chives, and JF Spicy Salt.
