Tonight's dinner was Deconstructed Beef Enchiladas - basically my JF Grass Fed Beef Bowl cooked down in some JF Simple Enchilada Sauce. So delicious and the perfect base for all your favorite toppings. Serves 2 with leftovers.
INGREDIENTS:
1lb JF Grass Fed Beef Bowl meat
2¼ cups JF Simple Enchilada Sauce
4 cassava flour tortillas, heated over a gas flame and cut into strips (I like Coyotas)
Purple cabbage, shredded
TOPPINGS:
Vegan feta cheese, crumbled (I like Trader Joe’s)
Avocado, chopped
Green onion, slice on the diagonal
Fresh lime juice
Hot sauce (I like Tia Lupita)
JF Spicy Salt, to taste
PROCESS:
In a large sauté pan, as you begin to cook the ground beef base of my JF Grass Fed Beef Bowl, ladle in your JF Simple Enchilada Sauce. The meat will absorb a lot of this, so add more to meet your preferred ratio.
While your sauce is cooking into the meat, warm the cassava flour tortillas over a gas flame and then cut them into strips. Work these into the meat as it continues to cook down. Add more enchilada sauce as desired - I find it best to include the entire 2¼ cups.
Plate this warm over your bed of shredded cabbage. Top with vegan feta, avocado, green onion, a squeeze of fresh lime juice, hot sauce, and JF Spicy Salt. Enjoy!
