My Fave Balsamic Dressing

A simple kid and adult friendly version. My daughter, Drew, started liking Balsamic Dressing on her salads about a year ago. I wanted to make a simple kid and adult friendly version with sweet undertones and a dijon bite. Boom my fave balsamic dressing was born.

This is a perfect light dressing for greens and eggs, which makes it easy to create a restaurant quality brunch vibe at home. Everyone loves the mild but sophisticated flavor. I make a batch and keep in an airtight container, but this doesn't last long.

INGREDIENTS:

½ cup olive oil
¼ cup balsamic vinegar (I like The Filling Station in NYC)
1 tsp dijon mustard (I like Amora Extra Strong French Dijon)
1 small shallot, finely minced
1 clove of garlic, finely minced
¼ tsp brown sugar (sub brown coconut sugar)
Fresh cracked black pepper, to taste 

PROCESS:

In a small bowl, combine the vinaigrette, mustard, shallot, garlic and sugar. While whisking, add the olive oil. Season with JF Universal Salt and pepper. Serve with any greens or in an Avocado. My mom used to serve us avocados this way when we were kids, elevated nostalgia at its best.
