Such a delicious on-the-go salad - easy for all the working girls and busy office days. Be sure to layer in all components as directed to ensure your lettuce stays crisp and fresh until you're ready for lunch. Serves 1.
INGREDIENTS:
Avocado, chopped
Peaches, chopped
Cilantro, coarsely chopped
½ jar Tonnino Tuna Fillets with Oregano
Radish, sliced thin on the mandoline
Red leaf lettuce, chopped
JF Toasted Pepitas
3 Tbsp JF Simple Mustard Vinaigrette
JF Spicy Salt, to taste
Toasted Pepitas:
Raw pumpkin seeds
½ tsp vanilla coconut sugar
JF Curry Salt, to taste
PROCESS:
Toasted Pepitas
In a dry pan begin to warm your pepitas, allowing them to open up slightly over the heat. Add in your JF Curry Salt and vanilla coconut sugar, gently combining to caramelize. They’ll stick together in the process. Once toasted, remove from heat and cool completely. Break them apart before assembling in your salad.
Starting To Feel Like Fall Jar Salad
In your jar, begin to build your salad upwards using my JF Simple Mustard Vinaigrette as the base. Layer in the avocado, peaches, cilantro, the Tonnino Tuna Fillets with Oregano, radishes, and chopped red leaf - in that order. Finish with your toasted pepitas and season with JF Spicy Salt when you're ready to eat. Enjoy!
