A new summer salad on rotation! Keep this cucumber heavy to balance the bitterness of the radicchio and licorice bite of the fennel. So good with a coarse mustard vinaigrette (single serve recipe below) and easily pairs with your choice of protein. Serves 1.
INGREDIENTS:
1 cup radicchio, chopped
½ cup fennel, sliced thin on the mandolin
1 organic, persian cucumber, sliced thin on the mandolin
¼ cup red onion, sliced thin on the mandolin
1 small orange, sectioned
Vegan feta, crumbled, to taste
JF Spicy Salt, to taste
Chives, chopped
Vinaigrette:
½ garlic clove, minced
1 tsp coarse grain mustard
¼ cup olive oil
1-2 Tbsp champagne vinegar
JF Spicy Salt, to taste
Fresh cracked black pepper. to taste
PROCESS:
Vinaigrette
Whisk together the minced garlic, coarse mustard, olive oil, champagne vinegar, JF Spicy Salt, and black pepper until well combined.
This Will Make You Like Radicchio Salad
In a large bowl begin to build your salad, layering in the fennel, radicchio, cucumbers, and red onion. Top with orange segments, crumbled vegan feta, and chopped chives. Dress in our grain mustard vinaigrette and season with extra JF Spicy Salt to taste. Enjoy!
