FINALLY, AN EGG SALAD I CAN STOMACH EGG SALAD

I love eggs, but I despise mayo and “egg salad”. So, here is a mayo and yolk free fast and delish new version. Serves 1. 

INGREDIENTS:

2 Tbsp red onion, finely diced
2 Tbsp celery, finely diced
3 hard-boiled egg whites, diced
½ avocado, finely diced
1 radish, finely diced
1½ tsp Fresno chili, finely diced
JF Spicy Salt to taste
¼ tsp garlic powder
1 Tbsp cilantro, roughly chopped

PROCESS:

Prep all your ingredients and place to the side. In a medium bowl, combine the red onion, celery, egg whites, avocado, radish, and Fresno chili. Lightly mix together, but you want it to stay chunky not mushy. Season with JF Spicy Salt and garlic powder. Top with fresh cilantro.
