Even the pickiest eaters will enjoy this easy fish recipe. Omit the flour for a lighter dish, and customize the spices to suit your palate. Pairs great with any of my delicious sides! Serves 1.
INGREDIENTS:
1 filet of cod
1 tsp garlic powder
1 tsp onion powder
½ tsp paprika
1 tsp
JF Spicy Salt1 tsp fresh cracked black pepper
¼ tsp thyme
¼ tsp oregano
2 Tbsp AP flour (sub gluten-free or almond flour)
2 Tbsp butter (sub vegan butter)
1 Tbsp olive oil
PROCESS:
In a small bowl, combine all the spices and mix together with a fork. Coat the fish in the spice mixture. Once the fish is evenly covered with the seasoning dredge it in a light coating of flour before. In a medium pan, melt the butter and add the olive oil. On medium high heat, cook the fish in the hot butter and olive oil for about 2-3 minutes on both sides. Serve with a fresh squeeze of lemon juice on top of your choice of grain.
