Super easy breakfast for a cold and rainy NYC morning. I incorporated my leftover JF Chili Cauliflower Rice as veg - a great time saver for weekdays. Serves 1.
INGREDIENTS:
Olive oil
3 eggs, beaten
JF Chili Cauliflower Rice, leftover
JF Spicy Salt, to taste
Fresh cracked black pepper
Chives, chopped
TOPPINGS:
Sriracha
Chives, chopped
Avocado, chopped
Vegan feta, crumbled (I like Trader Joe’s)
JF Spicy Salt, to taste
PROCESS:
In a large pan, begin to warm the olive oil. Pour in your 3 eggs and layer on the leftover JF Chili Cauliflower Rice. Season with JF Spicy Salt and cracked black pepper. Finish with chopped chives and cover to steam over medium-low heat.
Once it’s set, transfer to a plate and top with more chives, sriracha, avocado, vegan feta, and JF Spicy Salt. Enjoy!
