GARLIC BUTTER SALMON WITH FRIED CAPERS

This is my favorite way to eat fish. Try this recipe with the fish of your choice. The fried capers add a nice salty crunch. Serves 1.

INGREDIENTS:

1 (2oz) can of capers
¼ cup avocado oil
1 (6-8oz) filet of salmon
JF Universal Salt, to taste
Fresh cracked black pepper, to taste
1½ garlic cloves, finely minced
¼ cup butter, melted (sub ghee or vegan butter)
cup lemon juice, freshly squeezed
2 Tbsp fresh parsley, finely chopped

PROCESS:

In a large pot, add the avocado oil. It should be about 1/8” on the bottom so adjust according to your pot. Heat the oil until sizzling, then add the capers being careful not to splash on yourself. Cook them until they are golden brown, about 2-3 minutes. Remove them with a slotted spoon and drain on paper towels.


Preheat the oven to 400º. On a baking sheet, place the salmon filet. Evenly season the salmon filet with JF Universal Salt and fresh cracked black pepper. Combine the parsley and garlic and spread over the top of the salmon filet. In a small bowl, combine the melted butter and fresh squeezed lemon juice and whisk together. Carefully pour this over the top of the salmon filet being careful not to let the seasoning fall off. Bake these for about 15 minutes.


Serve this with the fried capers on top and season with JF Spicy Salt and more fresh cracked black pepper. This is great on top of white rice or a simple salad.
