Today’s JF Kitchen Brunch of soft scrambled eggs with homemade vegan whipped lemon and garlic feta spread (a fab sub for cream cheese, try it!) on grain-free sesame toast with olive oil and JF Spicy Salt. Serves 2.
INGREDIENTS:
Garlicky and Lemony Vegan Whipped Feta Spread:
½ a block vegan feta cheese, crumbled (I like Trader Joe’s)
1 garlic clove
A pinch of oregano
A pinch of Italian parsley
A squeeze of fresh lemon juice
A splash of almond milk (I like Three Trees)
JF Spicy Salt, to taste
PROCESS:
Garlicky and Lemony Vegan Whipped Feta Spread
In your blender, pulse together the vegan feta, garlic, oregano, parsley, lemon juice, almond milk, and JF Spicy Salt, until you’ve reached your desired consistency. Add more almond milk for a thinner base. Adjust seasonings to taste.
Enjoy over toast or as a dip - totally versatile and so delicious!
