Gluten Free Granola

This is a great option for a gluten free breakfast. I stopped eating gluten, a few years ago. These days there are tons of great gluten-free options out there. I am a true believer that when it comes to healthy food choices a homemade meal is a clear winner. In moderation, granola is a great way to start your day and this version contains a lot less sugar than the traditional granola you’ll find at your grocery store.

INGREDIENTS

2 ½ cup whole oats
1 cup rolled oats
cup sliced almonds
½ cup chia seeds
½ cup unsalted butter, room temperature (sub ghee or vegan butter)
½ cup brown sugar (sub brown coconut sugar)
¼ cup organic maple syrup
¼ tsp ground cinnamon
2 tsp pure organic vanilla extract
Pinch of JF Universal Salt

PROCESS

Preheat the oven to 300º. Combine all the ingredients in a big bowl. You can use your hands to mix until you form small clusters. Carefully distribute the mixture onto a large baking sheet and spread it into a single layer. Place the sheet in the oven for about 45 minutes or until the granola is golden brown. Give the sheet a careful shake a couple of times as the granola bakes. Cool the granola on the sheet. My favorite way to serve my homemade granola is with Greek yogurt, organic honey and strawberry preserves.
