Grain Free Blini

Grain Free Blini

A twist on my Clean Keto Pancakes, these grain-free blinis are perfect to pair with caviar, top with an egg, or totally personalize your own way! Yields 40.

INGREDIENTS:

1 cup blanched almond flour
¼ cup coconut flour
1 tsp baking powder
5 eggs
⅓ cup unsweetened almond milk
¼ cup avocado oil
¼ tsp JF Spicy Salt

 

TOPPINGS:

Caviar
Chives, chopped
Hardboiled egg, chopped
Red onion, chopped
Capers

PROCESS:

Whisk all the ingredients together in a bowl until smooth. The batter should be the consistency of a typical pancake batter. If it’s too thick add more milk. Make sure not to add too much, or the pancakes will be too “wet.” Preheat an oiled pan on the stove over medium-low to medium heat. Drop the batter onto the hot pan to form mini pancakes. Cover and cook until bubbles start to form. Flip and repeat until browned on the other side.

 

Pair with caviar, or enjoy as a meal with a fried egg.
