A lot of you ask me about sweet alternatives that fit the program. This grain-free french toast is delicious as breakfast or as a sweet treat anytime. Serves 1.
INGREDIENTS:
1 egg, beaten
Almond milk
Vanilla extract (I like Beyond Good)
Cinnamon
Grain-free bread, sliced thin (I like Plantiful Kitchen)
Vegan butter (I like Miyoko’s Creamery)
TOPPINGS:
Berries
Maple syrup
Powdered date sugar
PROCESS:
In a large bowl, whisk together the egg, almond milk, vanilla extract, and cinnamon; use your judgment for measurements. Dredge your sliced bread in that mixture, coating both sides well. In a large pan warm your vegan butter and fry each slice until lightly brown, flipping halfway through. Top with berries, maple syrup, powdered date sugar, and enjoy warm.
