GRASS-FED GROUND BEEF TACOS

Seven hours of commercial free football in the Fisher house today, which means lots of hungry boys. Time to cook up some Grass-Fed Ground Beef Tacos. Serves 4.

INGREDIENTS:

Grass Fed Ground Beef:
1lb grass fed ground beef
1 white onion, chopped
1 Tbsp avocado oil
Cilantro, to taste
Oregano, to taste
Smoked paprika, to taste
4 grain-free hard taco shells (I like Siete)

 

Cabbage Salad:
½ head of cabbage, shaved
¼ yellow pepper, chopped
1 jalapeño, desseded and diced
½ red onion, chopped
1 radish, chopped
½ lime, juiced
JF Simple Mustard Vinaigrette, to taste 
JF Spicy Salt, to taste
Fresh cracked black pepper, to taste

PROCESS:

Grass-Fed Ground Beef
Finely chop whole white onion. In a frying pan mix with avocado oil at medium heat. Add grass-fed ground beef to pan and break up throughly. Using dried spices, flavor with cilantro, oregano and smoked paprika. Let beef brown down until cooked through. 

Cabbage Salad

Finely slice half head of cabbage, yellow pepper, jalapeño, red onion and radish using a hand-held mandolin. Toss together into a mixing bowl, add in my JF Simple Mustard Vinaigrette, lime, and JF Spicy Salt.

 

Add the grass-fed ground beef and cabbage salad to grain free tacos. Pair with avocado and fresh lime.
