When you want something fast and comforting for lunch or a meat free dinner this is perfect.
INGREDIENTS:
1 Tbsp olive oil
1 bag organic green beans, trimmed
2-3 Tbsp green curry
1 (12oz) bag organic cauliflower rice
½ white onion, chopped
1 garlic clove, chopped
1 can organic coconut cream
JF Spicy Salt, to taste
TOPPINGS:
Red onion, sliced thin
Jalapeño, deseeded and diced
Tomatoes, chopped
Cilantro, coarsely chopped
Lime
PROCESS:
Cauliflower Rice Base
In a sauté pan, heat olive oil over medium heat. Add garlic and onion. Heat until translucent and then add frozen cauliflower rice. Cook until moisture is removed and cauliflower rice starts to brown. Remove from heat and place on the side to plate.
Green Curry
In a separate pan heat 1 tbsp of olive oil. Add green beans and sauté for one minute. Add coconut cream and green curry paste. Let green beans cook in coconut curry till fork tender. Season with JF Spicy Salt. Serve the green beans and coconut curry over the cauliflower and garnish with your favorite toppings.
