My simple spinach and green onion frittata is the perfect breakfast to make for when you want to get your greens in. Serves 1.
INGREDIENTS:
3 organic eggs
2 organic egg whites
1½ cups baby spinach
2 organic green onions, chopped
1 Tbsp chives, chopped
Fresh cracked black pepper
JF Spicy Salt, to taste
TOPPINGS:
Vegan feta, crumbled (I like Trader Joe's)
Olive oil
PROCESS:
Preheat oven to 350°. Whisk the eggs and egg whites together in a mixing bowl. Add the baby spinach into a pan with olive oil. Once spinach has wilted, add the green onion and chives. Pour the eggs into the pan and sprinkle JF Spicy Salt. Put the pan into the oven and take out once the everything has set. Crumble vegan feta and chives on top.
