GRILLED OLIVE SALAD

GRILLED OLIVE SALAD

I always want to try new ways to make salads delicious. I saw grilled olives on a food show I was watching and knew I had to try them in a salad. Serves 1.

INGREDIENTS:

9 olives
1 cup romaine lettuce, chopped
1 cup butter lettuce, chopped
¼ cup red onion, sliced thin
¼ cup vegan feta cheese (I like Violife)
Olive oil
½ lemon, juiced
JF Spicy Salt, to taste
¼ tsp oregano
Fresh cracked black pepper, to taste 

PROCESS:

Place the olives on skewers. I did 3 olives on one skewer. In a large pan on medium-high heat, place the olive skewers and sear on each side until slightly charred. Set to the side. In a large salad bowl, combine the romaine lettuce and butter lettuce. Add the thinly sliced red onion, vegan feta cheese, and grilled olives on top. Drizzle olive oil over the salad and squeeze the fresh lemon juice. Season with JF Spicy Salt, oregano, and fresh cracked black pepper.
