Grilled Pizza Tomatoes

My Grilled Pizza Tomatoes are a great use for summer produce - so yummy they taste just like pizza! Perfect for summer barbeques or weekend lunches with the fam, and can easily be made dairy-free with a plant-based cheese. 

INGREDIENTS:

Tomatoes, halved
Olive oil
Shallot, minced
Thyme, minced
JF Spicy Salt, to taste
Parmesan cheese (sub plant-based cheese)

PROCESS:

Brush your halved tomatoes with olive oil and lay them face-side-up on the grill. As the bottoms cook, sprinkle over the minced shallot, thyme, and JF Spicy Salt. Flip for an even grill, then turn back to face-side-up and sprinkle over the parmesan. Turn face-down to melt, then repeat a second time for an extra layer of cheese. Season with additional JF Spicy Salt and enjoy!
