After coming back from Mexico I was craving grain-free tacos. These are a great meat-free alternative that are just as delicious. Makes 2 tacos.
INGREDIENTS:
Jackfruit Tacos:
1 Tbsp olive oil
1 clove of garlic, chopped
¼ white onion, chopped
7oz jackfruit
1½ tsp chili powder
½ tsp cumin
½ tsp cilantro
½ tsp smoked paprika
Grain-free taco shells (I like Siete)
California Style Guacamole:
5 ripe avocados
2-3 fresh jalapeños, deseeded and finely chopped
¾-1 medium white onion, finely chopped
¾-1 red pepper to taste, finely chopped
2 limes, juiced
Generous handful of cilantro, coarsely chopped
JF Universal Salt, to taste
Fresh ground pepper
TOPPINGS:
Plain coconut yogurt (I like Culina)
Hot sauce (I like Tia Lupita)
Cilantro, chopped
Lime, fresh squeezed
JF California Style Guacamole
PROCESS:
In a large pan sauté olive oil, garlic, and white onion, let soften and caramelize. Add jackfruit, season with chili powder, cumin, cilantro, and smoked paprika.
Assemble in taco shells, topping with plain coconut yogurt, hot sauce, cilantro, lime, and my California Style Guacamole.
