A super busy work week ahead so I’m packing another JF Jar Salad for lunch. This one’s a bit more work because I was craving shrimp, but the flavors are delicious and it won't take you more than 10 minutes to throw together. Serves 1.
INGREDIENTS:
JF Simple Mustard Vinaigrette, to taste
Avocado, chopped
Celery, chopped
Purple cabbage, shredded on the mandoline
Cilantro, coarsely chopped
Mango, chopped
Shrimp, sautéed then chopped
Romaine, chopped
Raw sunflower seeds
Sautéed Shrimp:
Olive oil
Shrimp
JF Spicy Salt, to taste
PROCESS:
Sautéed Shrimp
In a large sauté pan warm your olive oil. When that begins to shimmer add in your shrimp. Season with JF Spicy Salt and flip for an even cook. Once they curl and are just pink, remove them from heat. Set aside to cool completely; then chop.
Tropical Shrimp Jar Salad
In your jar, begin to build your salad upwards using my JF Simple Mustard Vinaigrette as the base. Layer in the avocado, celery, purple cabbage, cilantro, mango, shrimp, and chopped romaine - in that order. Finish with raw sunflower seeds. Enjoy!
