Keto Chicken Pasta

This Keto diet (thanks Keto Kev) is making me crave my favorite foods more than usual. One can only eat so much salami and cheese. This Sunday I was in the mood for pasta and spotted organic ground chicken breast at Whole Foods as I was rushing through so grabbed it not really knowing what I was going to do with it. I originally was thinking meatballs but when I opened the package the chicken was a bit smoother in consistency and I was concerned it wouldn’t hold up without the bread crumbs so I tried this and it worked. Serves 2.  

INGREDIENTS

1 package organic ground chicken breast (I like Bell and Evans)
1 small shallot, chopped fine
½ white onion, chopped fine
1 clove garlic, chopped fine
1 Tbsp garlic olive oil
1 tsp JF Spicy Salt
½ tsp cracked black pepper
¼ tsp dried red pepper 
½ tsp dried oregano
1 cup JF Simple Tomato Sauce
Mozzarella cheese, shredded (sub plant-based cheese)
Parmesan cheese, shredded (sub plant-based cheese)
Italian parsley, chopped

PROCESS

In a nonstick pan heat the olive oil over medium and add the shallot, garlic and onion. Sauté until translucent, about 2 minutes. Add chicken breast, salt, pepper, oregano and chili pepper and cook through until crumbly. Break down the meat as it cooks. 


Once cooked, transfer to a baking dish, sprinkle with sauce and cheese and broil until bubbly. Sprinkle with extra parmesan/plant-based cheese and fresh parsley before serving Pairs perfectly with my JF Roasted Zucchini.
