I had a ton of poultry in the fridge and decided to make a keto variation of sesame chicken. This recipe also works perfectly with shrimp or beef - totally versatile and delicious! Serves 2.
INGREDIENTS:
2 Tbsp olive oil
3 chicken breasts, diced into ½”-1” cubes
JF Spicy Salt
1 Tbsp sesame oil, more to taste
Keto Sesame Sauce:
¼ cup ketchup (I like Good Food For Good)
¼ cup coconut aminos (I like Coconut Secret)
1 Tbsp raw honey
1 Tbsp rice vinegar
1 tsp garlic, minced
1 tsp ginger, minced
1 Tbsp arrowroot starch
TOPPINGS:
Toasted sesame seeds
Green onion, sliced on the diagonal
PROCESS:
Keto Sesame Chicken
Season your diced chicken with JF Spicy Salt. Warm the olive oil in a large sauté pan and add the chicken. Allow it to cook through and slightly brown, about 2-3 minutes. Remove from the heat and set aside in a bowl.
Keto Sesame Sauce
Whisk together all of the ingredients for the sauce. Be sure to scrape the bottom and all sides, combining well.
In the same pan you used to cook the chicken, begin to warm the sauce. When it starts to bubble, add the chicken back into the pan and coat well, creating a bit of a crust on each piece.
Turn the heat up to medium-high, don’t rush the cooking process allow this to caramelize and become slightly crisp. Add the sesame oil, let it incorporate over the heat.
Top with sesame seeds and green onion, and serve over cauliflower rice. Enjoy!
